Last night my husband and I were streaming our latest Netflix obsession, or as I like to put it: we got caught in a tv-show-nado. I sometimes wonder why I didn’t watch all these great TV shows when they were originally on, and then I remember that I was much younger and probably doing something a lot more fun and, no doubt, mischievous. Anyway! During this tv fest, I suddenly had the urge for some kind of appley/cinnamony dessert.
Now as I’ve mentioned before, I’m not a huge fan of baking; in fact I’m pretty awful at it. All that measuring, stirring, mixing, pouring, and the general following of instructions doesn’t sit well with me, so I tried to make a recipe that didn’t require too much of the aforementioned. The result is a recipe that is pretty fool proof…even for me!
Getting Started
Preheat your oven to 350 degrees, then start by making the streusel topping recipe. (I got this recipe from about.com and just made a couple of minor adjustments; feel free to use mine or theirs, but if you use theirs, cut it in half.) Using your hands or a fork, mix together all of the ingredients until crumbly; then set aside.
Next toss the apple slices in a bowl with the sugar, salt, cinnamon, and nutmeg until well coated; and layer in a small baking dish (mine holds 16oz). Cut the butter into small pieces and distribute over the top, then cover with the streusel mixture and bake in the oven for 20-25 minutes, or until bubbly and golden.
This is probably one of the easiest desserts I’ve ever made, and it was fantastic. I love how the apples release all of their juices to mingle with the cinnamon and nutmeg; and the crumbly topping gives it that added texture. I also like that 1 apple makes enough for two people and doesn’t leave any leftovers to worry about later!
Ingredients for Streusel Topping
1/4 cup all-purpose flour
2 tbs brown sugar, packed
2 tbs unsalted butter
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
Ingredients for Apple Mixture
1 medium to large apple, cored and cut into thin slices
2 tbs sugar
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
Pinch of salt
1 tbs butter
